April’s baking

There wasn’t much baking in April, mainly because we didn’t have much of a fridge freezer in April. Ours died a slow death, taking two grocery shops with it before finally being sent to fridge freezer hell. Finally our new one came into our lives but the dramatic end of our old curtailed many baking days. What little baking did happen is below.

First up for pure comfort is Mary Berry’s fork biscuits, I am immediately taken back to childhood as Mum used to make these when I was little and my two are happy when I make them. Plus they are lovely with a cup of coffee and a quiet, peaceful crafty moment in the garden

Next up was lemon cake. The lemon cake turned into an epic saga, my first go this year ended with a topping of lemony salt instead of lemony sugar (through a misunderstanding of which cow storage jars have sugar in and which have salt in). It seemed this cake was cursed as the next attempt was thwarted by a lack of lemons (they had gone mouldy really quickly). But, third time lucky and just in time for Mum and Dad visiting a lemon cake was achieved. This is Mary Berry’s Crunchy top lemon cake with no changes to the recipe.

Finally we had fun making french baguette for a cheese and nibbles lunch. It’s ages since I made it as trying to find anywhere warm enough in our house to prove bread takes some doing, but we tried the warming drawer in the new oven and it works a treat. Hopefully more bun and baguette shaped bread to come. This was made following the recipe in our bread machine manual.

So, not much baking in April. But, I’m getting antsy and want to try a new recipes (earl grey cupcakes, gingerbread, something involving the rhubarb in the fridge are tempting me at the moment) so May’s catch up might have a few more bakes in it.
